The idea of making Aceto Balsamico Tradizionale di Modena D.O.P. came to our family while trying to make a five year old boy eat his vegetables by making them sweeter, and more enjoyable to his palate. The experiment was a success, and over the years it first became a hobby, then a sort of job. The heart of our production is our farm Acetaia Ponterotto.
Aceto Balsamico Tradizionale di Modena D.O.P. is not just a condiment.
It is a refined product that embodies the heritage and the soul of a whole territory, with a decisive, and yet delicate character that makes it a protagonist on the table, in particular on special occasions.
From traditional dishes to the most complex and contemporary recipes, Aceto Balsamico Tradizionale di Modena D.O.P. represents a unique value, able to elevate flavours and sensations to the highest sublime levels.
Aceto Balsamico Tradizionale di Modena D.O.P. is made from cooked grape must. It undergoes slow acidification from natural fermentation, and gradual concentration due to the very long aging process in a series of barrels made of different types of wood, all without the addition of aromatics.
After the grapes have been pressed the must is boiled. Once it has decanted it is passed into the barrels where it will age inside the acetaia. The heat of the summer days, and the rigidity of the winters, when the vinegar is gradually passed into barrels made from different types of wood, allow us to produce a something which is perfect in both appearance and aroma.
Afterwards It is bottled, sealed, and numbered by an authorized bottling center.
Aceto Balsamico Tradizionale di Modena D.O.P. is born from tradition, and our love for the countryside. Its denomination perfectly reflects our state of mind while producing such a demanding product.
Being members of the Consortium we produce nothing other than the only two products which are recognized as Aceto Balsamico Tradizionale di Modena D.O.P.
Our dream is to bring this one of a kind product beyond the borders of our country where far to little is known about Aceto Balsamico Tradizionale di Modena D.O.P., and cheap industrial imitations are passed off as the real thing.
With itBetter we hope to reintroduce the world to a tradition which we feel needs a new look, without however touching its essence.
The cultural heritage which has defined our land for centuries is made up of simple and genuine pleasures.
Communion with nature, the harvest, and respect for the fruit of our land have, in fact, always been the most sincere, and intense, expression of the rural tradition which inspires our work.
